The sommelier's read

A year ago the Martini was 18% of cocktail revenue; now it’s 20%, up 26%. The Spritz grew even faster (+27%), and it’s up on the year even as it fades for the season. In spirits, bourbon (+12%) and amaro and liqueurs (+12%) gained; Japanese whisky slipped 16%. Spirits remain the best margin in the building.

What to do this month
  1. Keep the Martini program sharp: two gins, a vodka, a dirty and a dry option.
  2. Put an amaro after-dinner list on the menu for the holidays.
  3. Review Japanese whisky depth; it’s slowing.
