BinWise helps manage the different beverage programs of a dual-concept restaurant group
With 20+ locations and growing, Barteca had limited visibility into its beverage program. Implementing BinWise allowed the company to gain valuable insight into its existing programs while also expediting its new openings.
Inspired by travels in Spain and Portugal, Barteca’s restaurants have carved a space in both the fine dining and casual markets, spanning unique, Mediterranean-influenced tapas cuisine and laid-back, global beach culture. Barteca’s two concepts include Barcelona Wine Bar & Restaurant, which boasts an extensive selection of wines from Spain and South America, and bartaco, which has a larger liquor program with specialty cocktails that caters to its distinct cocktail menu. Barteca came to BinWise needing a system that could address both types of beverage programs while facilitating an aggressive new opening plan.
Barteca’s two unique concepts draw inspiration from the tapas cuisine of Spain and the Mediterranean, as well as the upscale street food of global beach culture.
Barcelona Wine Bar & Restaurant has become one of the largest importers of Spanish wines in the United States. Bartaco was introduced in 2011 and is known for its specialty craft cocktail list.
The BinWise Solution
BinWise provided the transparency into both concepts for all locations that Barteca needed, and its powerful features made managing new and existing programs easier. The company was able to streamline the opening process on the beverage side, while leveraging enterprise sales data garnered from all locations to manage purchasing. “It would take me hours, sometimes days, to go through sales data to figure out if I needed to replace a product, and with what. Now, with a few clicks, I can get back to my sales rep immediately,” said Wine & Spirits Director Gretchen Thomas.
In addition to facilitating purchasing, Barteca leveraged the BinWise platform to successfully mine analytics and improve other aspects of its business. “BinWise has really saved us time and money as we continue to expand.” Brad Haywood, Barteca’s Beverage Department Manager, is responsible for rolling out and implementing BinWise across multiple locations. “It’s great having a one-stop solution for all our beverage management needs including managing freshly squeezed juice for our specialty cocktails.”
Barteca’s staff has also benefited from the metrics that BinWise provides. The company found that features such as variance and theoretical cost reporting make users pay greater attention when doing inventory, and instills accountability with the managers. Data such as tracking theoretical cost allows Barteca to better gauge pricing, while also monitoring and understanding sales by location. “We’ve gone from a loose form of accuracy to an extreme level of accuracy, and it’s making everyone think harder about all actions involving the cost of beverage,” said CFO Matt Wilbur.
Barteca started with Barcelona in 1995 by Sasa Mahr-Batuz and Andy Pforzheimer. Beginning with a tiny, 38-seat wine bar they set out to recreate the feel and the look of an evening in the Ramblas.
